Ingredients:
1 small tetra pack of plain soy milk. I use steata original or natural or sofit plain.
1 teaspoon vinegar or 1/2 juice of lemon
3/4 cup sugar/Jaggery (put it in the mixer and make it fine)
1/3 cup oil (I use rice bran but you can use peanut or saffola type oil which has no smell)
1 teaspoon vanilla essence
1 teaspoon cinnamon (dalchini powdered) not necessary but adds a nice flavor
1 and 1/3rd cup whole wheat flour
3/4th teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
slightly crushed walnuts....
METHOD:
First keep all your ingredients ready in front of you.
Mix the whole wheat flour, baking soda, baking powder and salt.
In another vessel mix the soya milk and the lemon juice / vinegar and stir it. Leave it aside for about 5 minutes. it will look like it is getting split and thick. that’s what we need.
Add the fine sugar, oil, vanilla and cinnamon to it and stir vigorously with a fork till the mixture forms bubbles.
Mix the flour mixture in to this wet soya milk mixture little by little stirring it all the time till you've added all the flour mixture. There will be small lumps of flour. Try to get rid of them as much as possible. But don't stir too much. Add walnuts.
Spread vegetable oil evenly inside the aluminum container before pouring the mixture or else the cake won’t come out. Now pour this mixture into the aluminum bowl and put it inside the cooker. Do not cover the inside aluminum bowl. Just cover the cooker without the whistle.
Let it bake on low-medium flame for 40 minutes. Don’t open it in between. After 40 minutes open it carefully and check on the cake. If it still looks watery close it quickly.
If the cake looks sturdy and darker take a knife and insert it in the middle of the cake. If the knife comes out clean your cake is ready. If the knife has lots of cake then let it cook for 15 minutes more. If there is little batter on the knife let it cook for 5 to 10 minutes.
If it smells like the cake is burning reduce the flame to minimum.
Once the knife comes out clean and the cake looks like it has shrunk in size from the edges remove it from the gas stove and let it cool for 15 minutes before trying to remove it from the bowl.
To remove it from the tin use a knife to loosen the cake from the edges of the tin. Also try to lift it little from the sides when you’re doing that to try to free it from the bottom of the cake tin.
Put a plate on top of the cake tin and turn it upside down. The cake should come out freely. If it doesn’t try loosening it again from the edges.
To melt the Vegan dark chocolate:
Take a small vessel with water and put it on the gas. Take a slightly bigger vessel and put the Vegan Dark chocolate in it and put that on top of the small vessel. After two minutes the chocolate will start melting from the bottom. Just keep stirring till everything melts evenly. You can use a bit of Soymilk or almond milk to make it creamier.
Pour on top of cake after it cools. Make sure the cake has also cooled down....
